Quinoa Timbales

QUINOA TIMBALES

Ingredients (buy local and organic as often as possible)

2 cups steamed Red Quinoa (I use a rice steamer)

1 Tbs Extra Virgin Olive Oil

1 cup diced Monterrey Baby Bella Mushrooms

1/2 cup diced Vidalia Onion

1/2 cup diced Sweet Bell Peppers (red, orange, and yellow are awesome!)

3 Tbs sundried or fresh cherry Tomatoes

1 cup soaked, rinsed, then steamed Black Beans

1 Tbs chopped fresh Basil

8 spearhead cuts of steamed Asparagus

2 Tbs roasted sunflower seeds (no salt)

 

Once you have Quinoa steamed, add all other fresh chopped ingredients (except asparagus) and mix.  The most exciting part of this dish is mixing everything together and then putting the ingredients into a ramekin dish to make the timbales.  Kids LOVE to do this too!  Once you pack the mixture into a ramekin dish, flip it over onto a plate and slowly (while slightly twisting) pull the dish off and VOILA!  Top the timbales with asparagus spears.

Amanda! You and your cheese! Lol! It's actually the quinoa. When it steams and bursts, the little white part separates from it and looks like curly-cues! Using red quinoa it is much more noticeable (:
